been in a deep chill here in chi-town. Had to light a fire and bundle up. I'm wishing for soup and stew again... :/
but, for you warm weather Florida people:

chopped romaine lettuce
thinly chopped celery
sliced seedless cucumber
one diced granny smith apple (peeled and cored)
tomato cut into bite sized pieces
finely diced fresh parsley

squeeze 1-2 lemons over mixed veggies
drizzle olive oil
add salt to taste
add pepper to taste
add cumin to taste

toss and eat :)

It's spring here but heat it's just around the corner...my favourite dish is rice salad. This is the way I make it:
Cook the rice in abundant boiling, slightly salted water. Use parboiled rice or rinse the rice until the water become clear. Wait until it gets cold. In the meaning, prepare:
diced tomatoes
diced salami
diced cheese like Galbanino
capers
tuna in olive oil (but hold out the oil)
a bit of mayonnaise
I don't like pickles but if you like them you can put them into the salad.
Mix everything with rice and...enjoy your meal!

Shrimps or prawns/shallot or onion/tomato/avocado/garlic to taste/

empty the avocado out and mix with all the ingredients then put back into serve ;-)
